Yes, you coluld hack the Apple earphones or use an adapter.

Just solder the left right and ground wires to the jack correctly and everything should work perfectly since the remote simply passes the audio through. I've done something very similar with the ear buds that came with my LG phone that uses a proprietary connector. Just snipped, soldered to a smt headphone jack, heat shrinked, and everything works wonderfully.

Yes you can, but keep in mind that earphone wires allways are insulated with a kind of varnish. It could happen that the bridge isn't working well from the first time. An other thing to keep in mind is that Ipods have the strange capability to become very silent when you use them on stereo's that are not made for it.
