As a vegetarian who thoroughly enjoy's lasagne, I always use the no boil lasagne packets but I am not too keen on the lasagne that only has lots of green vegetables inside (even though I do like green vegetables). I buy a bag of quorn mince and use it as an alternative to meat. If you looking for a quick easy way of making vegetarian lasagna without spending hours in the kitchen I will give you a recipe that will feed the whole family.
VEGETARIAN QUORN (Veggie Mince) LASAGNE RECIPE Ingredients: small bag of pre-chopped onions small bag of pre-chopped mixed peppers 1 small bag of freshly chopped parsley 2 small bags of quorn mince 2-3 large cloves of garlic 2 large jars of basic tomato pasta sauce 1/2 jar of water 3 to 4 table spoons of olive oil salt and pepper to taste 1-2 packets of white or bechamel sauce mix and milk and butter required to make as instructed on back of packet bag of pre-grated mozzarella bag of grated mixed cheese Method Gently fry the chopped garlic in the olive oil until golden, the add in all the onions, parsley and peppers. Once cooked add in the quorn mince and half the water and cook for a few minutes. Next step is to add in the tomato sauce and stir.
Let this cook for ten minutes. Make the white or Bechamel sauce mix and then go back to the veggie bolognese sauce and add the salt and pepper to taste if required and the rest of the water and mix. Get a large oven dish and place 2 - 3 ladles of the sauce on the base of the dish and then cover with dry lasagna pieces (only a single layer) Spread some more of the veggie bolognese sauce over the top of the dried lasagna and then spread the white sauce over that.
Repeat this once or twice and then sprinkle all the cheese over the top and all that is left to do is place the dish in the pre-warmed oven. Cook this for 25 minutes or until a fork pierces easy through the lasagna and the cheese has become golden on the top and your done! No cutting, no slicing and no waiting for hours for the veggie bolognese sauce preparation!

Add onion and garlic; cook 3 minutes.
Stir in tomato sauce, mushrooms, tomato juice and basil. Bring to a boil; reduce heat and simmer 5 minutes. N a small bowl, combine ricotta, egg, salt and pepper.
Spoon 1-1/2 cups sauce into 13x9x2" baking dish. Top with half the uncooked lasagne, all the ricotta mixture, 1 cup mozzarella, 1/2 cup Parmesan cheese, 1-1/2 cups sauce, then remaining lasagne. Op with remaining sauce, mozzarella and Parmesan.
Cover tightly with foil. Bake in 350 degree oven for 45 minutes. Remove foil and bake 15 minutes longer or until lightly browned.
Let stand 15 minutes before serving. To use prepared sauce, In steps 2 and 3, omit onion, garlic, tomato sauce and basil. Add 1 (30 ounces) jar prepared spaghetti sauce with the mushrooms and tomato juice to browned meat.
