Better Homes & Gardens Cookbook Back in 1977, one of my grandmas gave me the Better Homes & Gardens Cookbook for Christmas. I wrote the date down on the inside cover, just a quirky little thing I do a lot. It's pretty beat up now, but I pull it out every time.
All of my recipes that I've copied down over the years are in there. It has substitutions & equivalencies inside the covers. I have a lot of cook books, but if I threw them all out & only had this one cook book, I wouldn't miss them.
I'd get by just fine. I get tickled at the old pictures in there. After all, it's 30 years old, but it's really a classic cook book.

Mine is a website, the only subscription that I actually pay for. It's the Cook's Illustrated/America's Test Kitchen Website. It has the full archive of all Cook's illustrated articles from the beginning.
I find their recipes to always be reliable and produce a great result. They also do a lot of testing of techniques, tools and ingredients. Their summary of brining is a classic.

Larousse Gastronomie (or Gastronomique as some versions seem to be called) This is essentially the French cooking bible. It's organised as an encyclopaedia and contains a truly enormous quantity of fascinating information. It's the place I look first for almost anything kitchen related although there are quite a number of other books in the kitchen which get consulted afterwards or on those rare occasions when it has nothing to say on the matter.It's fascinating to read as it contains all kinds of historical and incidental information (the French certainly take their food seriously; I approve).
It also contains recipes in enormous quantities. I have an old single-volume copy which is smaller than a hardback "Lord of The Rings", but largely because of small type and thin pages. I believe the present edition is some crazily expensive five-volume set and I think that's because the print has been made larger rather than due to any genuine expansion.

There is one for online and one for bookishness My "can't live without it" cooking reference that is online is the Cook's Thesaurus. It does exactly what you would expect - look up an ingredient and it tells you what you can substitute for it. I love that they call it a thesaurus.
I really love that part. I've used their substitutions and I've never been led astray with them. I really enjoy reading the write ups they have about the various food products which often explain why the suggested substitute works so well.My offline reference is Cook's Illustrated's The Best Recipe.
I love America's Test Kitchen, Cook's Illustrated, and their scientific approach to cooking. I know I can always find what I need in The Best Recipe or something close enough that I can adjust it to become what I need. I adore their scientific explanations and write ups.

The Joy of Cooking. It's really hard to pick just one, but if I had to The Joy of Cooking would probably be it. I've used it for all kinds of baking with the recipes just as-is.
I've started a lot of unfamiliar dishes with what their recipe says and then use that as a jumping off point to modify from. And it's a good reference for things like food substitutions, what unusual cooking terms mean, how to joint unusual meats, what different part of the process do and why you need to do them, etc. This is my go-to housewarming gift for young folks, too. I have a few other really good ones listed below that I use often, but as an all-round guide I'd go with The Joy of Cooking.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
