Generally They Do Most sports run on a certain "season" of the year. Football tends to be more of a Fall/Winter sport (in the NFL at least), so most high schools will have games starting in late August and going up until late October to early November. It's obviously to limit the amount of games that high schools play and to avoid harsh Winter conditions and angry parents.

The same holds true for generally all high school sports. Basketball is usually around the Winter time, about when the NBA starts but it finishes up a lot sooner than the league does. Baseball starts maybe a week or two after MLB begins their season and finishes up during July (even though school's out, oddly enough).

Schools lucky enough to have a Hockey program will play around Winter time, but nowhere near as long-winded as the NHL has been. (Stanley Cup Finals in June?
