Here's one I tried for hubby, the pumpkin lover - Pumpkin Cream Cheese Muffins Ingredients8 ounces cream cheese3 eggs2 1/2 cups sugar2 1/2 cups flour1/4 cup pecans, roughly chopped3 tablespoons butter, melted2 1/2 teaspoons cinnamon1/2 teaspoon salt2 teaspoons baking powder1/4 teaspoon baking soda1 1/4 cups solid-packed pumpkin1/3 cup vegetable oil1/2 teaspoon vanilla extractDirectionsHeat oven to 375° F. Lightly coat two 12-cup standard muffin tins with oil and set aside. Mix the cream cheese, 1 egg, and 3 tablespoons sugar in a small bowl and set aside.
Toss 5 tablespoons sugar, 1/2 cup flour, pecans, butter, and 1/2 teaspoon cinnamon together in a medium bowl and set aside. Combine the remaining sugar, flour, salt, baking powder, baking soda, and remaining cinnamon in a large bowl. Lightly beat the remaining eggs, pumpkin, oil, and vanilla together in a medium bowl.
Make a well in the center of the flour mixture, pour the pumpkin mixture into the well, and mix with a fork just until moistened. Evenly divide half of the batter among the muffin cups. Place two teaspoonfuls of cream cheese filling in the center of each cup and fill with the remaining batter.

I've got a great tasting (but only okay looking) one for you Here's a link to the recipe I've used. I made it exactly following the recipe, except I omitted the nuts so my kids could eat it. Also, I found it makes 24 muffins, not the 18 the original recipe states.
Here is my version, which contains only very minor changes from the original: INGREDIENTS FILLING: 1 (8 ounce) package cream cheese 1 egg 1 teaspoon vanilla extract 3 tablespoons brown sugar TOPPING: 4 1/2 tablespoons all-purpose flour 6 tablespoons white sugar 3/4 teaspoon ground cinnamon 3 tablespoons butter MUFFIN BATTER: 2 1/2 cups all-purpose flour 2 cups white sugar 2 teaspoons baking powder 2 teaspoons ground cinnamon 1/2 teaspoon salt 2 eggs 1 1/3 cups canned pumpkin 1/3 cup olive oil 2 teaspoons vanilla extract DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Grease and flour 24 muffin cups, or use paper liners. To make the filling: In a medium bowl, beat cream cheese until soft.
Add egg, vanilla and brown sugar. Beat until smooth, then set aside. For the streusel topping: In a medium bowl, mix flour, sugar, and cinnamon.
Add butter and cut it in with a fork until crumbly. Set aside. For the muffin batter: In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt.
Make a well in the center of flour mixture and add eggs, pumpkin, olive oil and vanilla. Beat together until smooth. Place pumpkin mixture in muffin cups about 1/2 full.
Then add one tablespoon of the cream cheese mixture right in the middle of the batter. Try to keep cream cheese from touching the paper cup. Sprinkle on the streusel topping.
Bake at 375 degrees F (195 degrees C) for 20 to 25 minutes. _______________________________________________ The taste of these muffins was out of this world! So delightful!
But, I found that the cream cheese topping was thin and runny, spread out all over the muffin batter (forget about that "don't touch the side of the muffin cup" rule), and didn't sink in while baking. As a result, the muffins didn't look very pretty :( In fact, it's one of the few recipes I make that I've never taken a picture of. Maybe you'll have better luck than me with this, and I highly recommend it based on taste.
