Does anyone have a recipe that makes the cooked carrot more interesting?

Roast them, glaze them, puree them with mashed potatoes.

Roast them with honey and balsamic vinegar. You can add other veg along with them too.

I don't have an exact recipe, but I love cooked carrots with ginger. Glazing them makes them even better!

Melt some butter in a small saucepan and sprinkle in brown sugar, then add the carrots. This is one of the few ways my toddler will eat carrots.

During Thanksgiving I make glazed carrots. Using a microwaveable dish melt about 1/2 a stick of butter or margarine with some brown sugar about 1/4 c packed. Add the carrots, mix, and microwave on high about 4 minutes.

Now take honey and squirt on about 2 tablespoons and add some cinnamon, or nutmeg if you like. Microwave until the carrots are tender. If you really want to go sweet add a little maple syrup.
