Update If you'll be running a single 1080p monitor, go with the GeForce GTX 680. The 3GB of VRAM on the 7970 only helps in multi-monitor configurations or running a single monitor of resolution higher than 2560x1600. For rendering or design work I'd definitely lean towards Nvidia because CUDA is more widely supported than AMD's Stream. What games are you looking to play, and at what screen resolution? Those two cards trade off the performance lead depending upon the specific game title.
