I really like the ones that come in the jars in the supermarket. I tried making my own and it tasted horrible, wasn't smooth and creamy, and after I was finished, and I had put it in the fridge and took it out, stuck together. Anyone have any recipes for a nice, smooth, creamy, non-coagulating Alfredo recipes?

So easy, so creamy, so yummy! If a little garlic flavor to the Alfredo sounds good, then you really have to try this recipe because I *love* it. It's easy enough that even mine turns out delicious and creamy every time.

I like this basic recipe 2 teaspoons flour 2 teaspoons butter 2 cups of heavy cream 1/3 cup of fresh grated parmesean cheese Mix your flour and butter into a roux Add the cream, stirring until thick Slowly add the cheese, stirring until it is the consistency that you want. VARIATIONS Use buttermilk or skim milk instead of cream Add 2 cans of crab meat after the cheese Add hot cause or a chipotle pepper Add the herbs and spices of your choice (if fresh herbs, add at the end) .
My family loves this one. Warning - this has lots of fat. I only make it occasionally, but it it SO good.1 pint heavy cream 1 stick butter 2 Tbsp.
Cream cheese 3/4 Parmesan (not grated in can) 1 tsp. Garlic powder In a saucepan, combine butter, cream and cream cheese. Simmer until melted and well blended.
Add garlic powder. Gradually stir in Parmesan. Simmer for 15-20 minutes on low, stirring often to avoid sticking.
This is also a good sauce to use if you want to add in things like grilled chicken or shrimp. The sauce holds up well without being overpowering. You could use Half and Half for the cream, but regular milk would be too runny and wouldn't cling to the pasta.

I have your basic Alfredo sauce and then one that is alittle different, but very creamy. ALFREDO SAUCE: MAKES ENOUGH FOR 4 SERVINGS ON PASTA 6 T. Butter 2/3 c.
Whipping cream 1/2 t. Salt large pinch of white pepper, large pinch of nutmeg (I use nutmeg in all my cheese sauces) 1 c. Freshly grated Parmesan cheese ( about 3 oz.) 2 T.
Fresh parsley, chopped 1. Place butter and cream in a 10-inch heavy skillet over medium-low heat. Cook, stirring constantly, until well blended and mixture bubbles for 2 minutes.
Stir in the salt, pepper and nutmeg. Remove from heat.2. Gradually stir in the Parmesan cheese until thoroughly blended and fairly smooth.
3. Return skillet briefly to heat , if necessary, to completely blend cheese, but don't let sauce bubble or the cheese will become lumpy. Pour your sauce on your pasta and add chopped parsley and offer more grated Parmesan on the side.
Now, this is an similiar sauce , but has a " wonderful tang lurking beneath the creamy sauce". It only takes about 5 minutes to prepare and you can easily double it. GORGONZOLA SAUCE: MAKES 2 MAIN SERVINGS OR 4 FIRST COURSE SERVINGS 1/4 c.
Butter 1/2 c. Whipping cream 3 oz. Crumbled Gorgonzola cheese ( or Roquerfort ) ( Truthfully, you can use any blue-veined cheese...I have used SAGA and it is great because Saga is not that strong a cheese.
) 1. Melt butter in a large skillet.2. When butter foams, add cream and bring to a boil.3.
Add the cheese and turn heat to low and cook 3-4 minutes, until mixture starts to thicken. You may season with salt and pepper ( and nutmeg, if you are like me), but remember that the cheese is salty to begin with. After pouring your sauce on your pasta, add grated Parmesan cheese Toss with a pair of forks until well coated.
