We went to Lorelei Resort in Treasure Island, FL near St. Pete. It was wonderful. There was a dock for the dogs to jump in the water, and it was very clean - not fancy of course to accomodate dogs.

My Zilla was a big old dog, so we had to go to places that welcomed big dogs Zilla was well over 200 lbs and he was big - 6'5" on his hind legs, so you have to love dogs to like him. I went to the Paw House in VT It was right in ski country. Each room had a doggie bed in it (ours looked like a tiny platform bed). They had a big fenced in play area with lots of toys and agility equopment.
They also had a "Playroom" with a separate "room" for each dog (about 4x6, with bed and bowl of water). You could leave your dog in the playroom, while you went out to dinner or skiing and they would take them out to play while you were out. They even have a resident trainer, so you can sign up for private training classes.
If you go during summer (as we did), there are tons of hiking trails in the area, some leaving from the Paw House, itself. All in all, it was a great get-away and I would recommend it.
Show dogs I had a show dog (he dies about 1 month ago from brain cancer) yet he and I travelled all over the place for shows and did a lot of overnights. I am NOT aware of any hotels that are exclusively for dog owners but there are plently that accept pets. I took my dog to a hotel during the Wheaten Nationals.
The entire hotel was filled with Wheatens - every room and the parking lot was filled with RVs with Wheatens. It was SO MUCH FUN! You took your dog everywhere.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
