Before you start the process of cleaning all your information off of the iPad, you should make sure that the device has a full charge. It can take hours for the full procedure depending how much information is stored on the unit. Alternatively, you can plug it into the power supply while you erase the iPad.
Then, just "Erase All Content and Settings". This can be accessed by going to Settings -> General ->Reset. Since an iPad has hardware encryption, this feature will remove the encryption key.
All the user settings, media and files should be erased after this. Now, the iPad has been restored back to the factory settings. At that point, a person can feel secure about transferring ownership of their mobile device to someone else.
