I had deep-fried turkey about 5 years ago and never looked back. Now, every Thanksgiving, I have a little bit of roast turkey and a lot of the fried version. It is moist, crispy and delicious.
Now, to make deep fried turkey, you will need a 40 or 60 quart pot with a basket and other turkey frying hardware. In addition, you will need a ton of oil, deep fry thermometer, propane gas tank and burner. The best oils to use are corn, peanut or canola oils.
Now, the marinade is done by injection into the turkey. You need to inject the turkey, prior to cooking and then, rub it with a dry spice rub. Smaller turkeys are generally better for frying and I would try to stay under 15 pounds.
