A canned pumpkin is really just a cooked and peeled chunk of pumpkin, so once you have cooked pumpkin you can follow any pumpkin pie recipe. You can cook the pumpkin like any other winter squash. Cut it in half (which is way easier with a baking pumpkin than with one of those jack-o-lantern monsters) and scoop out the seeds.
