The best I've found to keep pork chops (or any pork) from drying out when cooking is..... If the meat is frozen - I defrost in water with a couple of tablespoons of salt. This does not make the meat salty when cooking - but just to be safe I reduce the salt in the recipe. Salt is best left to taste and can be added at the table.

If not frozen - then I soak it about an hour - same as above. Also - I am a strick believer in food thermometer - best for port is between 160-170 degrees to get it well done withouth drying out. These two steps combined always give me the best results.

Wonderful recipe follows: Brown chops in some oil; add onion slices and brown them a little. Now add Campbells Cream of mushroom soup either Golden or regular, diluted with 1/4 milk. Pour over chops, coper and simmer.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
