I got a cooking lesson from a fireman on how to treat/cook pork, It was intense! What I learned from this man was amazing. If I want delicious crispy on the outside and juicy on the inside is to lightly coat my pork chops in diluted mayonnaise or some kind of dairy.
Pop them in the oven for some oven fry heaven! Yum! When I cook a whole pork roast I now load it down with delicious fruits and potatoes of course.

I recently started making chikken fried pork chops/steaks. Dunk it in beaten egg, roll it in flour with montreal steak seasoning and fry it up in hot oil.
Wow, that sounds nice! Chicken fried anything is delicious. I found by coating the pork with a dairy instead of egg allows the breadcrumbs to adhere better.. When I fry the breading doesn't separate from the pork.

Mixing the milk and egg would give the best of both worlds. Don't forget the hashbrowns and sausage gravy.

LOL, Gotcha going now :) I say lets double dip the breading, then use extra gravy and make some buttermilk extra light and fluffy biscuits....leave the gravy boat on the table please! I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
