You can buy refried beans in a can or even make them from canned pinto beans. To get a truly authentic taste and texture however, you need to start with dried beans. This is time consuming and needs to be started a day ahead of time, but not difficult.
The night before you are planning on cooking the beans empty a pound of pinto beans on the cupboard and sort through them. Sometimes there is a pebble or two among the beans and you want to be sure to remove them. Let the beans soak in a large pot of water overnight.
Be sure you use plenty of water as the beans will soak it up. The next day drain the beans and then cover with fresh water. Boil them for two hours, being sure to check frequently and add water as needed.
After they have boiled and become soft add the seasonings to the water and continue to boil for another hour. Again adding water as needed. Drain the water so only about half the beans are covered.
