How to use leftover mashed potatoes for breakfast?

Mix them up with an egg or two, make them into a shape like a pancake and fry them to make potato cakes!

Add graded cheese, and bacon! Works for me!

Make small flatish shapes about half inch thick ,coat with beaten egg and then dust in flour ,fry til crisp and serve with egg and bacon!

Add 2 cheese cubes, chopped onions, coriander leaves, salt and pepper. Mix well and keep aside. Take bread and dip bread slice in water, one by one.

Squeeze out excess water. Fill the above mixture and fold on all sides and deep fry in hot until it is golden brown. Serve hot with sauce.

Put them in a frying pan with onions and butter and turn them into hashbrowns.
