It doesn't need a couple of days, but letting it sit for awhile does allow the flavors to "mingle" a bit more. But--don't let that stop you from eating it immediately! It will be very good anyway, I'm sure!
I make mine in the morning if I plan on having it that afternoon. Keep it refrigerated. You can't let it sit around a few days because the acid in the salsa (usually lime juice) will turn your tomatoes to mush eventually.
It doesn't keep long in the fridge because it doesn't have preservatives. Best to eat it within a few days. If you want to keep it longer it needs to be processed in a pressure canner.
I think that it starts to taste rancid if you wait more than two days.
