There are lots of eggplant recipes on HubPages. Type "eggplant recipes" into the search box above richt -- then click on "hubs" on the right side list and you'll find a long string of them.
Some of my favorites: baba ganoush, eggplant parmesan, or just slice them thick, brush with olive oil, sprinkle basil and oregano, throw in some tomatoes, wrap with foil and grill on the BBQ!

Eggplant has very good taste if you know how to prepare and is very healthy and is good to control cholesterol. I drink the juice sometimes. Baked Eggplant 2 large eggplants ( I like to cut the eggplant night before or 3 hours before cook.
I let them rest in water. Make the taste less strong) 2 onions, sliced? Large 3 cloves garlic, crushed?1 / 2 yellow bell pepper, chopped 1 egg lightly beaten 2 cups of bread cumbers salt to taste parsley to taste Olive oil to taste Parmesan cheese Preheat oven to 375 degrees.
Cut the eggplant into strips. Mix the onion, garlic and bell peppers and salt in a bow. Dip the egg plant in the egg, then in the bread cumbers.
Place place on a baking sheet and cover with the veggie mix. Drizzle with a little olive oil and Parmesan cheese. Cover with aluminum foil and bake for 40 minutes.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
