Dark meat gets more exercise The "dark" in dark meat is a molecule called myoglobin, related to hemoglobin. It's also what makes red meat red. The more a muscle is exercised, the more myoglobin it develops, and the darker it is.
Chickens use their legs for walking around, so they get dark. But because chickens can't fly, their breast muscles are unused. The meat stays white.
Wild birds, like wild turkey and goose, are all dark meat, even in the breast muscles, because they actually use them to fly. You get a similar effect in animals. Veal meat is very pale, because it is under-exercised and doesn't develop much myoglobin.
Other less-well-used muscles, even in adult animals, are paler in color. The tenderloin is a good example: it's less strongly colored, and like white meat, less strongly flavored. It's prized for its smooth texture, but the flavor is usually supplemented with bacon, bleu cheese, or butter.

Blood blood blood Its all about blood flow. You could say all mammals or higher level animals have "white meat" and "dark meat" - the darker versions tend to be muscle areas where there is a lot of blood flow, and the white areas are more fat laden areas of an animal... Here’s a website that answers your question directly: straightdope.com/classics/a981204b.html And I’m quoting them here to save you the trouble of clicking on that link above: Dear Cecil: . What is the difference between white- and dark-meat chicken?
In other words, what makes white meat white and dark meat dark? --Steve, via AOL . Dear Steve: .
White meat is white because of the chicken’s chronic lack of exercise, something to think about next time you’re about to curl up in front of the TV for another I Dream of Jeannie rerun. Dark meat, which avian myologists (bird muscle scientists) refer to as "red muscle," is used for sustained activity--chiefly walking, in the case of a chicken. The dark color comes from a chemical compound in the muscle called myoglobin, which plays a key role in oxygen transport.
White muscle, in contrast, is suitable only for short, ineffectual bursts of activity such as, for chickens, flying. That’s why the chicken’s leg meat and thigh meat are dark and its breast meat (which makes up the primary flight muscles) is white. .
Other birds more capable in the flight department, such as ducks and geese, have red muscle (and dark meat) throughout. . Muscle type is genetically determined, so we can forgive the chicken for thinking, exercise is futile!
My breast is going to stay white no matter how many reps I do on the Nautilus! . This is not true for humans, but I understand the feeling.

The meat gets its color from the amount of exercise done by the muscles The breast gets little exercise, and the legs, of course, get a lot. The dark color comes from a chemical compound in the muscle called myoglobin, which plays a key role in oxygen transport. The breast muscle is the primary muscle for flight and in other birds, like ducks and geese, it is dark.

Muscles I believe The muscles which are used (like thighs and legs) have more proteins to transfer oxygen than do the ones which are not used like the breast meat. I know I can find some web articles: here's one diet-blog.com/archives/2007/10/08/dark_m... OK, here is one from UGA, you know that's GOT to be "top flight"! uga.edu/aboutUGA/research_whitemeat.html Sources: "As God is my witness I thought turkeys could fly!
" .
Muscles I believe as the dark meat is from the legs and thighs, this has more muscles around it or something like that and so the dark meat has had more excercise! I guess in theory that would mean the dark meat is lower in calories...... dunno! .
