1. Make the DNS changes last, you want to get your new website up and running before your transfer the DNS so you have no downtime. 2. Set up your SQL databases on your new web host first.

The easiest way to do this to use phpmyadmin which should be available in Cpanel 3. Use an ftp client to suck down all your content from 1and1 4. Upload the content to your new host, make sure that it's in the place the web server is looking for it.
