Assuming the applications have been bought via iTunes and not installed via a jailbrake, the applications will all be availble in iTiunes. Connect the phone to your computer using the usb connector. When the phone appears in iTunes, select it and then select 'applications' ensure that 'sync applications' is checked.
You can then select not only which applications (that iTunes is aware of) are installed, but also which screen they appear on. If you have truly 'lost' applications due to a bad sync or other event, then you can re-download them for free from the iTunes store, either on your phone directly or via your computer. If you just updated a jailbroken iphone, you are out of luck as there are no jailbreaks for the latest os release.
