I always vote interesting/not interesting if they apply. To be honest, though, I am a little skeptical of who else bothers to vote and why, seeing as the top two interesting open questions are the $100 and $75 questions, and they aren't interesting at all beyond their large tip.
I will admit that I am terrible about clicking on "interesting" or "uninteresting. " I have always felt that my answers/views do that for me. This is one of my (few) flaws.
Now I feel guilty. It is nice to get a few interesting votes. Maybe they need to give points for voting interesting/not interesting to get people into the habit.
