Audacity or Adobe Audition There are many programs out there for doing this. A very good free one is Audacity audacity.sourceforge.net/. It should do pretty much everything you'd like.
If you want to spend some money, there's Adobe Audition, adobe.com/products/audition/, $349. I have this one and love it. It will do a LOT more than simply record the music coming from your LP's.
I find it very easy to understand and simple to use. There are many more, some better than others. If it were me just starting out, I think I'd give Audacity a try first since it's free.
If you run into problems with it, or just don't like how it works, then go look at some of the others.

I cant really gove you an answer, but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
