My favorite rice side dish, main dish, and dessert Here are three recipes for a side dish, main dish, and a dessert, all made with rice. They are all also meatless and low in calories and fats. (For convenience, because brown rice takes so long to cook, when I buy it I usually cook the entire package and freeze it in one cup servings.) Greek Spinach and Rice (side dish) 2 teaspoons olive oil 1 cup chopped onions 3 cloves garlic, finely chopped 1 10-ounce package frozen chopped spinach, thawed and drained 2 tablespoons grated parmesan cheese 2 cups cooked brown rice Salt and pepper to taste Cook onions in oil in a medium saucepan until onions are tender, about 5 minutes.

Add small amounts of water, if necessary, to prevent sticking. Add garlic and stir for one minute. Add remaining ingredients, stir, and heat through until excess water from spinach (if any) is evaporated.

Fried Rice! Yes, you can make fried rice pretty healthy by using brown rice that's full of protein and fiber and then use good fats in the oil, I use smart balance oil for this recipe. Your basic recipe: 1 onion 2 cups or so of already cooked and chilled rice soy sauce teriyaki sauce green onion/scallions 1 egg, beaten salt and pepper For this, simply heat your pan over really high heat with a 2 tsp of the oil.

Add the egg and you can either scramble it or let it cook like a fried egg and then slice it up. I prefer to scramble it. Once it's cooked, take it out and set it aside.

Heat a tbs of oil in the pan and stir fry the onion, stirring the whole time for 2-3 min or so, however soft you want the onion. Then add the rice, let it heat through for a min or so. Pour the rice into a serving a dish, add however much soy sauce and teriyaki you want.

I usually would add a tbs of each. Season with pepper and just a little salt. Add a little chopped scallions on top of each serving.

That's the basic but I like to add in chicken or shrimp with broccoli and mushrooms. You would cook the chicken or shrimp beforehand with the rice. You would add the broccoli and mushrooms in when you add the onion to the pan, and then add the precooked chicken or shrimp when you add the rice.So yummy!

The Grain of Life These are both from Cooking Light Magazine. Squash and Rice Casserole You can change it around by using vegetable broth or different kinds of squash and rice. I like to use butternut squash and Brown Basmati rice.

I all so add fresh sliced mushrooms. 8 cups sliced zucchini (about 2 1/2 pounds) 1 cup chopped onion 1/2 cup fat-free, less-sodium chicken broth 2 cups cooked rice 1 cup fat-free sour cream 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese 1/4 cup (1 ounce) grated fresh Parmesan cheese, divided 1/4 cup Italian-seasoned breadcrumbs 1 teaspoon salt 1/4 teaspoon black pepper 2 large eggs, lightly beaten Cooking spray Preheat oven to 350 degrees. Cover, reduce heat, and simmer 20 minutes or until tender. Drain; partially mash with a potato masher. Combine zucchini mixture, rice, sour cream, cheddar cheese, 2 tablespoons Parmesan cheese, breadcrumbs, salt, pepper, and eggs in a bowl; stir gently.

Spoon zucchini mixture into a 13 x 9-inch baking dish coated with cooking spray; sprinkle with 2 tablespoons Parmesan cheese. Bake at 350 for 30 minutes or until bubbly. Preheat broiler.

I LOVE this rice! My mother in law gave me this recipe after she made this rice dish for us one night. I'm not a big rice person, but I had two helpings of this stuff.

When she gave me the recipe, I was pretty surprised that it inlcuded chicken livers. I thought she'd left them out, but she said she used them. So don't let the chicken livers scare you away--I absolutely hate liver, but couldn't even taste it in this dish.

This recipe makes 12 servings, so it's good for a crowd or you could easily cut the ingredients in half. Dirty Rice (from Paula Deen on foodnetwork.com) 1 pound bulk pork sausage 1 pound chicken livers, finely chopped 1 cup chopped onion 1/2 cup chopped celery 1/2 cup chopped green bell pepper 4 cups hot cooked rice 1/4 cup chopped fresh parsely Salt and freshly ground black pepper Cook the sausage and chicken livers in a large skillet until browned. Add the vegetables and saute until soft.

Gently fold in the rice and parsely. Season, to taste, with salt and pepper. Difficulty: easy Prep time: 25 minutes Cook time: 15 minutes Yield: 12 servings (this recipe has a five star rating on the Food Network website) I don't know about the fat and calorie content of this recipe, but it is from Paula Deen so it can't be that good for you.

Maybe use whole grain or brown rice and the leanest sausage (maybe even turkey sausage) to cut some of the fat content. It would probaby still be very, very good! Sources: my MIL and Paula Deen .

Chicken & rice I’m taking this out of my head, as I have nothing written down, but this is a good dish. Take about 2 cups of Minute Rice, melt a half stick of butter, add a can of Cream of Mushroom soup, a can of Veg-All vegetables (with juice) & enough milk to thin it out, as the rice is going to suck up some of the liquid. I add some parsley flakes, & Mrs. Dash Original Blend.

Pour this in a 9X13" pan. Lay a cut-up chicken or all chicken breasts on top of this. Bake at 350° until good & done.

This makes a yummy meal. Sources: how I make it .
