Since I don't know if you have bone in or bone out... Let's just fry them in the skillet on the stove top! Put a little bit of water and a little butter in a frying pan (preferably one with a lid), and cook your pork chops in that on a medium heat, turning frequently. I persoanlly like to season with pepper and garlic salt.

I would serve mashed potatoes and a green vegetable (green beens, lima beans, or broccoli) or a combination of veggies (carrots, broccoli, and cauliflower). I would also have applesauce. If you're wanting to drink wine, I would do a white wine (maybe something a bit on the sweet side, like a reisling).

Grilled or broiled with applesauce I was brought up in the philosophy that pork chops would be grilled or broiled like steak, and similarly seasoned. I was also taught that the perfect side dish was homemade applesauce. (when I was young, homemade applesauce was all one word) Potatoes or sweet potatoes are good, too.

Serve with mashed potatoes as the gravy is YUMMY! Maybe add some green beans, or what ever veggie you like. In general, pork chops go great with apple sauce!

I guess I'm too late but............ The secret to making good, tender pork chops is first to brine the chops at least 4 hours (and make sure you add your favorite herbs to the brine solution) and second is MINIMAL cooking. I can't over emphasize the need to cook them to the point where they're almost done and let stand time to the rest.

If you are frying them coat them with mustard before you flour them. Also - use pepper - pork is bland. Scalloped potatoes go well with pork chops.
