Well, any of those would be way better than what you have now. You would be best with the Core i5. Right now it is the best bang for your buck processor out there.
Though the Core i7 is better, it cost a decent amount more. Do note, that getting a decent video card in addition will help as well. That old AGP card will not be able to be used on the new system as they do not have AGP slots but PCI-E x16 instead.
The reason I mention this is that Photoshop and ULEAD supports GPU acceleration, which would help with your overall performance. As for motherboard, stick with whats works. I've had great success with Gigabyte over the years, and it seems you have as well, so sticking with that isn't a bad plan is it?
Do note, that hard drive of yours might be at risk at failing, so I would backup that data and be sure to get a new hard drive for the new system as well. Asus is another great choice to go with as well for motherboards. For video card choices, ones by EVGA and XFX are normally the best to go about getting.
You should actively keep backups as hard drives are far from reliable means of long term storage. You can also pickup two of the same hard drives and run them as Raid 1. It is meant to add fault tolerance to the system.
The whole design is that the data is copied to both drives, if one fails you can replace it, rebuild the array and have lost no data in the process. Ofcourse if both fail at the same time, you are screwed, but that is pretty uncommon. Which is why backups are still important.
Do note that if you say have two 500GB drives in Raid 1, you only have 500GB of storage.
