Depends on your body Some people's bodies can take more wear and tear then others but the generally rule is you do have to give them time to rest so you can get the maximum result. For minor aches 24 hours is good (Like after very heavy cardio workouts or light weight training workouts). For ones that hurt like after lifting heavy weight 2-3 days is good.

Make a workout schedule so you can work different muscles everyday and are not working the same muscles within a 24 hour peroid. Personally I have a workout where I work chest and tri on one day, back and biceps on another and shoulder and legs another. This is because when you do the main core workouts, each muscle group is worked together.
Have day where you go light weight and high reps, and other where its all about lifting as much as you can. As far as running, there is a really fine line between sore and tearing muscles. If you are not accustomed to running 3-5 miles everyday...don't get up and go run 5 miles 3 days in a row.
I like to look at running as a builing process. Yes, you should run when your muscles ache, but if you feel sharp pains, stop running as far and as fast. Pace yourself to where you just get your heartrate up but not to where you feel strain.
