The general rule is to show as little of your manuscript as possible publicly if you plan to submit it to a publisher. You are allowed, though, to publish an except which should be only a little fraction of the total word count. My excerpts are generally about 1000 words or less and I use them to generate interest while i'm writing the stories.
The best way to get feedback on your manuscript either for proofreading or critiquing is to have a critique partner or join a critique group. That way your work is preserved and there is less risk of plagiarism before publication. If you have a specific publisher you are targeting, it is probably best to ask them directly about their policy on excerpts.
