I own one just like that, only she has recovered from the infection and no longer requires medication. She used to be horrid about her ears, but now allows me to scratch by her forelock. I still use a bosal on her instead of a proper bridle with a bit, because it seems less stressful.
Otherwise, what you are doing is the right way until she recovers. People will tell you, "Let it be a learning experience." You'll get tired of hearing it, but accept it, because it's more or less true.
You'll became a True Expert at putting together bridles when being helped by a fidgety horse.
