We don't eat many of them, as kidss don't seem to like eating eggs as much as dying them. Everyone in the family makes a "name" egg to throw against a tree and make a wish. I have also heard of burying them for the same purpose.

We adults like "Eggs Goldenrod" for breakfast on Easter. You make a white sauce (also known as bechamel if you look in a fancy cookbook). One cup of sauce does three or four eggs.

Make a slice of buttered toast for each egg. You take out the yolks and smash them fine with a fork and work in a little salt to taste. Slice the whites and arrange them as petals of a flower on the toast.

Add a blob of hot white sauce to the middle of the flower and sprinkle the sauce with yolk mixture. (As the years went by, we just started slicing the eggs into the white sauce and pouring it over toast like chipped beef. ) The rest of the eggs are hidden and re-hidden by the kids until they wear out.

If we have a REALLY nice one, we save it for a year or more in a safe place till it dries up and the yolk rattles around inside. At which point we show it around to each other and somebody drops it, or it rolls off the edge of something. That's about it.
