Talk to your local independent nurseryman, or look up your local extension service. When I was growing up, we had preprinted handouts delivered to our nursery from the extension service, as well as handouts we developed for ourselves. As long as a customer wasn't clearly the get-advice-for-free-and-then-buy-from-the-discount-store type, we were more than happy to give them all the advice they wanted.
I can also recommend the Sunset Western Garden Book. It is a great resource to have, as it pays excellent attention to the climate differences among the western states. (I checked mine, and it includes Utah) one thing I know for sure, though, is pay close attention to your drowing season, because that will determine what kinds of tomatoes and corn you can grow, if any.

1 I live in Pennsylvania at what I believe is 41 degrees of latitude. I had a greenhouse for a while. I discovered that it was far cheaper to have other people grow vegetables down south, truck them up north and for me to buy them in grocery stores.
I think you have two things to consider: 1. The total cost of everything you will need to grow the stuff and 2. Sunlight.
Vegetables, especially tomatoes are dependent to a certain amount of sunlight. In the winter months I'm pretty sure you don't have enough and grow light electricity is too expensive. So, you can grow pretty much any vegetables you want but only in the summer.
Now things other than vegetables I don't know much about. Just don't plant any trees close to your house.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
