(Blanch in boiling water for five mins.) DRAIN, SET ASIDE 2Cook onions AND MUSHROOMS in butter until onions are tender& transparent.

ADD SPICES 3Stir in flour& cook 5 minutes, stirring constantly. 4Add milk and cream slowly, stirring constantly.5Stir in grated cheese until smooth.6Slowly blend broth into sauce. 7Add Velveeta cheese and stir until melted.10Add all broccoli to the soup.

11Simmer 15 minutes.12You can add more Velveeta for a cheesier flavor. Slowly, stirring constantly.

Sherried Mushroom Bisque 2 pkg (2 oz size) dried cream-of-mushroom soup mix 2 cans chicken consomme (aka chicken broth/stock) 3/4 cup milk, 1/2 teaspoon nutmeg, dash cayenne pepper, 1/8 teaspoon dry mustard, 1/2 cup sherry Combine all ingredients, except sherry, with 2 1/4 cups water in medium saucepan. With whisk, beat until well mixed. Over high heat bring to boiling point, uncovered.

Stir occasionally. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat.
