Not your traditional pasta salad, but... I like this one a lot! It is very easy to make. It is a sweeter version of pasta salad, and great for warm weather.
COOL CUCUMBER PASTA 8 oz. Tube pasta, or any other variety 1 tbsp. Vegetable oil 2 medium cucumbers, sliced 1 medium onion, sliced thin 1 1/2 cups sugar (or less to taste) 1 cup water 3/4 cup vinegar 1 tbsp.
Prepared mustard 1 tbsp. Dried parsley flakes 1 tsp. Salt 1 tsp.
Pepper 1/2 tsp. Garlic salt (I know I have adjusted these amount to my liking, especially using the whole 16 oz. Box of pasta at a time, and adjusting the other ingredients.) Cook pasta and drain.
Rinse in cool water. Stir in oil, cucumbers and onion. Stir remaining ingredients together and pour over pasta.
Chill 3-4 hours. Hope you like it! Sources: my recipe file .
Cucumber and Onion Pasta Salad If you like eating cucumber and onions in the summer, you’ll love this pasta salad I got from my best friend. I make it for every carry-in dinner we go to. 1 lb.
Fusilli pasta 1 large cucumber, peeled 1 small onion 1 c. Vinegar 2 Tbsp. Mustard 3/4 c.
Oil 1 c. Sugar 1 tsp. Salt 1 tsp.
Garlic powder 1 Tbsp. Parsley flakes Cook the pasta according to the box directions. * Drain pasta and cool with cold water.
While pasta cools completely, very thinly slice onion and cucumber and add to pasta. Combine remaining ingredients very well then pour over and pasta mix. Toss to coat well.
Can be served immediately or refrigerated until needed. *I actually cook it a little less (about 6 minutes) if I’m making the salad a day in advance because the pasta softens as it soaks up the dressing. I ususally get these cute mini seedless cucumbers at our grocery store so they are little pieces.

Fusilli Jerry! This pasta is very well received. It's a cold dish, but it gets its flavor from a warm preparation. It's colorful and tasty.
It holds up on a buffet line, and best of all, it's easy. 2 cups fusilli pasta (you can also use penne) 3/4 cup sour cream 1/2 cup chopped red onion 3 tbl chopped scallions (green part only) 3 tbl chopped fresh basil (or 1 tbl dried basil) 1 cup red or yellow grape tomatoes cut in half 1/2 tsp sea salt 1 tsp pepper 1/2 cup chopped parsley Cook fusilli in boiling water (about 8 minutes), until tender, but firm (do not overcook). Immediately transfer pasta to strainer and blanch pasta in cold water for 30 seconds.
Transfer drained and still warm pasta to large bowl and toss in sour cream so it coats the pasta. If you are using dried basil, add it now. Let pasta cool for 30 minutes, then add remaining ingredients and serve.
If you plan to make it the night before and refrigerate it, wait until the last minute to toss in the chopped parsley. Enjoy! Sources: Old catering recipe.
This is mine: This is an idea I originally swiped from "The Romagnoli's Table". There are a zillion variations (even Martha Stewart has one but it's good in spite of that). It's one of the few things you'll find in this collection that is actually good for you too.
This is strictly a fresh ingredients type of dish. Canned tomatoes or that styrofoam produce you get in the supermarket won't do the trick. Ingredients 1 Pound fresh, very ripe tomatoes, seeded and chopped 1 Medium red onion, chopped 1 Green bell pepper, seeded and chopped 6 Cloves of garlic, minced fine 4 Jalapeno peppers, seeded and chopped 1/4 cup minced, fresh herbs (Parsley, Basil, Oregano, Chives) 6 Tblsp Good Olive Oil 2 Tblsp Red Wine Vinegar Salt to taste 1 Pound Rotilli (Corkscrew) Pasta Preparation Mix all the ingredients, except the pasta, in a mixing bowl.
Cover and let sit (not refrigerated) to blend flavors while the pasta cooks. Cook the pasta al dente, drain and place in large serving dish. Pour the veggie mix over and toss to mix.
The trick here is the hot pasta which kicks all the aromatics loose at once. You can do this cold but then it's just another pasta salad. Delivery Serve at once (while hot) with chunks of fresh Italian Bread (the marinade makes a marvelous dip and you can be virtuous about skipping the butter) and a red table wine.
Makes a meal by itself or a neat side dish with broiled chicken or lamb chops (or fresh swordfish if you are rich). I cant really gove you an answer, but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest. A good paper is one that people get drawn into because it reaches them ln some way.As for me WW11 to me, I think of the holocaust and the effect it had on the survivors, their families and those who stood by and did nothing until it was too late.
