Wow, iMac 3G! That is vintage! I wish they'd make multi-colored Macs nowadays, that's my only complaint about Macs - they just have the one design available, and that's it.
Anyhoo, if you can find a Linux OS that is from 1998 or thereabouts that would be compatible with your hardware, then go for it. It shouldn't be able to connect to update servers to download anything beyond what it's capable of installing - meaning, Linux Distro 1 shouldn't be connecting to Linux Distro 2 servers for updates. At least, that's how it works with Ubuntu - I know Karmic has its own update servers separate from Hardy and Intrepid and whatnot.
You should, in theory, just get the OS straight out of the box, as up-to-date as it ever got. If you have your old OS CD available, I might keep that handy. It'd be nice to have a backup plan if, indeed, your Linux distro decides to bork itself. ;).
I would just throw Pather on, 10.3.9 was really stable unless you have about a Gig of Ram then you can go Tiger. You could use itunes on it and some new programs such as VLC Player, and Firefox. It will do everything you want with no headache.
After all you said you want to use it for playing music and it is running BSD under the hood so you can go command line if you really want to. Have Fun!
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
