At our house.... the Easter Bunny hides plastic eggs filled with jelly beans or coins around the living room. He leaves goodies in the Easter baskets, which the kids set out the night before along with some carrots for the Bunny's "snack. " As far as what goes in the basket--well, I think it's against the law to NOT include a big, tacky chocolate rabbit!
The kids usually also get some small, outside spring-time toys, like bubbles or sidewalk chalk. Sometimes a little set of Play-Doh, stickers, matchbox cars for the boys, earrings for our daughter. Sometimes the Easter Bunny's dark side (ie my husband) sneaks some extra candy into the baskets. In general, the Easter Bunny tries to put things in the baskets that the kids will actually get some use out of AND avoid a raging sugar rush at the same time.
I think the Easter Bunny would love to be able to hide eggs outside, where the children could romp through the mild spring air and search for treats among the daffodils, giving us all kinds of lovely photos to remember the occasion. However, we live in Connecticut, and the weather at Easter is almost never conducive to outside egg hunts. Even if the temperature almost qualifies as "warm," the prevalence of mud makes hunting for eggs in cute spring outfits and dainty sandals kind of difficult.

1 As a child I enjoyed the Easter bunny, but I was very disappointed as I grew up to find out that I never knew the real reason for Easter - it celebrates the Resurrection of Jesus Christ from the grave. Please make sure that your children have fun with the Easter bunny but teach them the real reason for Easter as well. Easter is, after all, the holiest day in the year.
