The history of Italian Wedding Soup is interesting. The modern version of this soup is from an old traditional hearty Spanish soup called minestra maritata, which translates to married soup. Meaning flavors of the meats and vegetables marry together well, not a soup served at weddings as the modern version is.
The original version contained a mixture of meat with a few vegetables as opposed to today’s soup with vegetables, pasta, and only meatballs. The ingredients vary more from family to family more that from region to region. The base ingredients usually include some form of green vegetables such as spinach, curly endive, or others.
