To take a lot of calories is not the same to safely gain weight MsDivaEsq! Well, first of all I may say I am surprised to see a question about gaining weight instead of loosing it. I will go straight to the point.

They say most calories are from drinks, so drink milk-shakes, smoothies, lemonade, and lots of juices (get the 100% juices, not the ones loaded with sugar)... A vegetarian burrito from Chipotle with guacamole, beans, sour cream, cheese, rice, salasa will run you about 1200 calories... olives, nuts, avacado all have the good fats and are high calorie...I have a really good guacamole recipe if you are interested... I love hummus, it is a pretty healthy snack with good fats...try it with pita chips...I eat it with celery and carrots but that is because I am trying to lose weight... eat lots of pasta, pesto might be a good sauce for you since it is full of pine nuts and olive oil...I don't care for it myself, but have recently found at the grocery store a cilantro pesto that I like a lot... eat a lot of protien like eggs, beans, cottage cheese and chicken which will help you gain lean muscle ... granola bars may be helpful and are easy when you are on the go... peanut butter and jelly or pb and honey sandwiches on a multi-grain bread...throw a banana on it like Elvis did... good luck and I hope you are able to find more healthy ideas...
