Usually the Chef has the job of designing the menu for the restaurant. These recipes come from the imagination, experience, and mind of the chef. They still have to practice them and perfect them before memorizing the final version of the recipe.

In culinary school, we learn basic cooking techniques such as sautéing, poaching, frying, grilling, braising, broiling, blanching, and baking, among others. The best way speed up your food prep time is to practice chopping fast, keep your work area organized, and make sure you have a mise en place for each dish that you plan to make.
