When I concentrate on a low carb way of eating, I use these as desert type items: 1. Mini Cheesecakes: Mix 1 pack cream cheese, 1/4 cup Splenda, an egg, and a touch of vanilla .
Beat until smooth and then pour in a mini muffin pan and bake at 350 degrees until browned. In my oven it takes about 15 minutes. I tried to google the recipe to get other variations as I know there were some when I first found it years ago but I could not find them today.

I double the coconut and omit the flour. I also use regular peanut butter even though it has more carbs because I don't care for the natural.So my version is not as healthy or low carb as the original.
When you view the site you will see their version is 1 gm net carb I tried a few of the Atkins baking mixes and just thought they were to expensive for what you got so I just adapt and cook on my own.
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
