See details for a couple of very nice low carb recipes. Pheasant Sautéed with Shallots And Orange Cream 2 servings Ingredients: 1 pheasant, about 2 pounds(boned and skinned, meat removed from the bones the day before)OR 2 boned, skinned chicken breasts2 Tablespoons butter2 Tablespoons canola oilMixture of 1/2 cup Oat Flour and 1/2 cup Soy Flour (for dusting meat)2 Tablespoon shallots, chopped fine1/2 teaspoon salt, more or less to taste1/8 teaspoon white pepper - ground1 teaspoon orange extract or 1/8 tsp orange oil1 teaspoon orange zest (grated orange rind)2 packets Splenda1 cup pheasant or chicken stock1 Tablespoon chives - chopped2 Tablespoons butter1/4 cup heavy cream1 cup chicken stock - if using Chicken only! Preparation Method: 1The day before, remove the meat from the bones.
You will have two boneless and skinless breasts, thighs and a few nuggets of leg meat. (Alternatively, prepare chicken breasts - skin if neccesary, and clean. ) Pound the meat between sheets of plastic wrap until pieces are 1/4 in thick.
Cover with plastic wrap and refrigerate. (Use bones and nuggets of meat from pheasant legs to make stock in water - about 6 cups, along with a few slices of onion, celery and carrot. Add a small piece of bay leaf and a few peppercorns.
Bring to a boil and then reduce the heat and simmer for 2 hours. Strain and cool the stock. ) 2In a non-stick frying pan heat the butter and oil over medium-high heat until the butter turns light golden.
Dip the meat into flour lightly coating it, place in the pan what would have been skin side down and sprinkle with salt and pepper. Sauté slowly for about 3 minutes and turn over and cook 3 minutes longer this time over medium heat, try not to over brown them. Remove from the pan and keep warm covered with a little aluminum foil.
Add the shallots and cook one minute. Add the stock, orange extract and zest and Splenda. Bring to a boil.
Reduce the mixture until it is about 1/2 cup in volume, add heavy cream and butter and cook to thicken 3 additional minutes. Add cooked pheasant or chicken. Warm them in the sauce turning a few times, adjust the seasonings with salt and white pepper to your taste.
Serve immediately sprinkled with chopped chives and the remaining sauce. **************DeepDish Quiche Pizza 4 servings Ingredients: 4 ounces cream cheeseThree eggs1/4 cup parmesan cheese1/3 cup heavy cream1/2 teaspoon oregano2 cups shredded Italian cheese (mozzarella, romano, parm mix - or your choice)1/4 teaspoon garlic powder1/4 cup tomato sauce1 cup shredded mozzarella20 slices pepperoni Preparation Method: 1Beat cream cheese and eggs until smooth. I posted these two about a month ago....they are still good ....and still low carb! These crispy fried chicken strips have no carbohydrates, but they are so good. The Parmesan and Romano cheeses form the crisp crust.
Make extra, because these have a way of disappearing fast. 2 skinless boneless chicken breast 1 egg beaten 1/2 C Parmesean cheese, grated 1/2 C Romano cheese, grated 1 tsp. Black pepper 1 tsp.
Italian seasoning 1/8 C butter 1/8 C olive oil Serves 2 as Main Course or 4 as an Appetizer Combine the two cheeses (if you don't have both kinds, don't worry, the recipe works just fine with one variety), the pepper and Italian seasoning. Slice chicken into long strips. Dip chicken pieces into the egg then dredge in the cheese mixture.
Use more cheese as needed. Heat butter and oil over medium-high heat and sautee chicken strips for about 4-5 minutes per side or until cooked through. Serve immdeiately with Garlicky Lemon Broccoli (see below) Garlicky Lemon Broccoli 1 heads broccoli, cut into florets juice of 1/2 lemon 3 tablespoons extra-virgin olive oil 2 cloves garlic, finely minced 1/2 teaspoon salt 1/4 teaspoon ground black pepper pinch of crushed red pepper flakes (optional) Put the broccoli in a steamer basket set over a pan of simmering water.
Cover and steam until the broccoli is crisp-tender, 3 to 4 minutes. Meanwhile, squeeze the juice from the lemon into a large bowl. Whisk in the oil in a slow, steady stream until thoroughly blended.
Whisk in the garlic, salt, pepper, and pepper flakes (if using). Add the hot broccoli and toss to coat with the dressing. Makes 2 Servings Sources: kalynskitchen.com .
