Foods containing Vitamin K can alter how the Coumadin is working for you. Vitamin K causes clots in the blood and the Coumadin is prescribed for preventing clots. In order to prevent "out-doing" your Coumadin, it is best to avoid increasing the amounts of Vitamin K enriched foods you eat.
You can (and should) continue eating those types of food if you currently eat them on a regular basis - just do not increase the amounts or frequency. In other words, if you regularly eat a salad with spinach greens for lunch, continue to do so. Your dosage should be based on your current dietary habits.
Also important: Do not go on a diet program and do not add any vitamins or supplements to your diet without consulting your prescribing physician first.
