Since the appliances will be new, I'd like to have them appeal to the largest range of potential buyers. The salespeople are pushing black and stainless steel, but I think those are a more personalized taste. Is white a better choice?

Go with White Black and stainless steel are popular colors right now, but avacado was a popular color several years ago. Do you see people buying avocado appliances these days? The thing is , tastes change.
But you don't know when they do. Your choice might help make the sale, but if your tastes differ from the potential buyers, it could cause them to give your house a pass. White, or other neutral colors like beige, generally are less offensive.

Stainless steel is still popular. Black goes with everything. You will do well with either.
You do not want to go with what you Like. You won't have to live with it. You should consider spending a bit and painting the house, re-landscaping, and if you can, replace the carpeting (if not that, at least deep steam cleaning).
The house should be as close to mint as possible. With the market being what it is, you will need every advantage to sell it. Do not think about giving credit a letting them paint or put in carpet.
People what to buy what is nice. If it looks poor, you will get a poor price, and then they will want concessions on top of that for the carpet and paint. Finally, rent a storage locker and put as much of your stuff as you can.
You want to have 4 outfits in the closet, the rest in storage. It makes the closets look bigger. You want the pantry almost empty with a few popular foods well organized.
Remove about half of your furnature to make that house look bigger. Remove all personal pictures, artwork, and memory items. A few well chosen items on display make the house look big and lived in.
More than a few makes it look cluttered (i.e. Death for selling a house). It is hell to sell, but if you spend the time and money now, it will sell quickly and at a higher price.
I would do... what your budget allows..stainless steel is expensive...I personally would rather have black since stainless teel is so hard to maintain .
It seems to me that the choice of appliances depends on the home you're trying to sell. As you suggested, the appliances should look like they belong in the space they're in. Stainless steel would look wrong in a vintage farmhouse or an old Victorian house.
White would likely look out of place in a contemporary home. What's the age/style of the home you're trying to sell? Is the house currently occupied or furnished?
Unless this is a starter home, I'm not sure it need appliances. Are you sure the buyers won't already have appliances? I can understand that you might feel like it needs to have those things to have a good chance of selling quickly, but I can't help but wondering whether your potential buyers might already have appliance.
Or maybe they would rather buy their own. I wonder if instead of buying new appliances, you might include a gift card to a local appliance store. That way, the buyer could get exactly what they want.
As a buyer, that would appeal to me.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
