The answer is difficult. My best answer is this: The studios use Protools. Plain and simple.
The problem is that if you buy the regular version it's expensive and not only that, it's quite the complex program. Its plus side is that is is a powerful program with lots of great plug-ins and software that works effortlessly with Protools. There is an M-Audio Version of protools that is less expensive (I think about $250) and you'll need to get an M-Audio Interface box to use with the software.
This is a good option. There's also Sony Vegas or even Sonar, which are great programs, but pricey as well. Now, just about all of the new software programs out there give you the option of going through and laying down an endless amount of 'layered' tracks, meaning you can record your guitar, go back and lay down your vocals, etc.And never run out of tracks.

Audacity. I have been using Audacity for quite a while. It worked well for me.
You can download it from here. You should download both Audacity and LAME MP3 Encoder. After installing Audacity when you want to export your audio file as mp3 Audacity asks you to locate "LAME MP3 Encoder" file which you should do.
Working with Audacity is really easy. You may record from microphone or from your PC. Hope this helps!

I only know the one I use...Cakewalk Sonar... ...Pro Version #4. I had a little bit of exposure to another program when I took a synth course...before I get off-track...ha! The point is, no matter what you choose, it’s probably going to be a steep learning curve.
I am PC-based, so I can’t speak for Apple’s Garage-Band, etc. Your best bet is to have/find/make friends with someone who is already doing it, and can give you a hand up. That’s the only reason I went with this particular program: a former band-mate/current recording buddy was already into it. One thing I like about this version and they are up to #7 now, I think... is that compositions can be remixed for 5.1 surround-sound.
Be sure to get a sound-card that is compatible with your software. I refused to listen to my expert friend on this one, and wasted a lot of time coming around to his way of doing things, because I thought I’d found really cool card/hardware-interface...but I just couldn’t make it record anything! Home recording can be insanely frustrating when you only have the manual to consult, because they usually assume you have so much prior knowledge.
I don’t know how many times I’ve pounded my fists on the desk, saying "I just wanna make it do THIS! Why the bleep isn’t THIS in the index?" Home recording can also be richly rewarding, once you get the hang of it.
Many times I have stayed up late recording/editing, and then burned a WAV file to disc, to listen to in my car to & from work, only to be inspired to go back and tinker with it some more the next evening. It’s highly addictive, and could take a large chunk of your "free" time, once you get into it. I have a full-time job, and am married, and still have a semblance of a social life, so there never seems to be enough time... Sorry, I know you asked about SOFTWARE, it’s just that I’ve really been hoping to connect with others out there who are into home recording.

Audacity I suppose it depends on how much you would like to spend for it. If you're kind of a tightwad when it comes to things like this, you may want to try the freeware Audacity (audacity.sourceforge.net/) .. You can't beat the price.
