Extra virgin olive oil is perfect The oils to avoid, from the standpoint of arterial health, are the saturated oils that are generally found in byproducts of tropical plants and from animals. A list of these might include palm oil, coconut oil, lard, and butter. Any oil which is "hydrogenated" on the label should absolutely be avoided because of the its transfat content -- even if the transfat is listed as 0g on the label (since it need only be reported if it's >.5g per serving -- and a default "serving" of oil is quite small).
Crisco is changing their recipe in 2007 to fix this, so you won't have the transfat issue but it is still just as bad for you from a saturated-fat perspective. The oils to use are those that are highly unsaturated. Olive oil is the classic example and can be purchased relatively cheaply.It also has one of the longest room-temperature shelf-lifes of unsaturated oils so you don't have to keep checking whether it's turned rancid.

A lot depends on what you mean by healthy. Corn, peanut and olive oil are all pretty much equal in both good and bad qualities and Although canola oil has slightly less calories the difference is small. All are classified as vegetable oil and as long as you stay with one of these four you are probably okay although there are some fairly exotic (and hard to find) oils that may be a tad more healthy.
The main difference between these oils are flavor, smoke point and the texture that they add to food. Stay away from lard and you will be fine. Canola or vegatable oil is the healthiest with olive oil a close second. They all contain what doctors call good fats. The mono and poly unsaturated fats.
Extrav virgin olive oil is healthy and I use it alot as well. Many chefs will tell you to reserve the extra virgin for uses on salads and to finish off as a toppin gon foods and to use the regular olive oil to cook. I personally find the extra virgin frin to cook with.
Tip:if you ever need to cook something that requires more than just a little oil in the pan use a vegatable oil and then add just a little extra virgin olive oil to it. Olive oil has a low smoking point and will burn if heated too high or cooked too long. The added vegatable oil will hep raise the smoking point and still give you the flavor of the olive oil..
What I use.... I don't have any indepth explanations of the oils I use, but I use GRAPESEED OIL- very light flavor and very healthy. It can be used for cooking or as a dressing ALMOND OIL- healthy, rich ,subtle. It's good to bake fish in.
WALNUT OIL- Light nutty flavor. Good for salds and vinaigrettes. This can be good for grilling too.
I also use Olive Oil too...that's very healthy also, but if you want to switch it up a bit, these are good. I do know Grapeseed Oil is really good for you . Hope this gives a little more info.
