What is the history of the donut?

The donut is a simple and humble pastry with an interesting past. The first recorded recipes are from the 1850s, when donuts with known as ¨olykoeks¨ , which is Dutch for ¨oily cakes¨. The Dutch started the donut tradition by taking sweet balls of dough and frying them in pork fat.

Oily cakes may not be the most appetizing of names, but it is certainly accurate! The story of how the donut ended up with a hole in the middle is a bit unclear. However, there are many versions to the story.

The middle was traditionally taken out because people were noticing that the middle of the donut was often left uncooked even though the rest of the donut was perfectly cooked. So, someone had the idea of adding fruit or nuts to the center of the donut, which is also why it’s called a doughnut. One woman named Elizabeth Gregory was known for her doughnut recipe and she sent her son assail with some donuts.

Captain Gregory didn’t like nuts, and he took them out, leaving a hole in the middle. The chef on board received orders from the captain to make the doughnuts without nuts, and with a hole! And that’s the story of the donut.
