Chicken in a pot I love to take a chicken and put it in a pot. I use some clay pots made by my friends, but any large pot with a lid that can go in the oven will do. You can use a whole chicken or chicken parts.
Throw in a cup of rice, some carrots and celery, a little salt and pepper, maybe a bay leaf and some marjoram/thyme/sage, put the lid on, and throw it in the oven at 350 for an hour or two. (A cup of chicken stock or water will ensure that the rice gets fully hydrated and make for a stew rather than a casserole. ) You can do the same thing in a crock pot; just set it on low and leave it there for the whole day.
Or a slow oven (225) will do the same effect if you don't have a crock pot. It's easy, and very, very comforting when it's cold.
