No eating raw meat won't kill me. I don't get my meat from factory / comercial sources. I know and inspect the farms and processing plants for the meat myself on a regular basis.

Such Scardy Cats! You will get a lot of answers telling you not to do that, but you are right: if you know the source, there is no reason not to eat it as you like. I am originally from Belgium, and my grand-parents had a small farm.
I was raised on milk still warm from the cow (not pasteurized and boiled and rendered completely tasteless). My grand-father would eat 2 raw eggs for breakfast every morning, and I still like to do that once in a while, even though this appalls my husband who is worried I'll get sick. But an egg is clean inside, any bacteria is on the shell, so if you rinse the outside before you break it, it's perfectly safe.
What we call "fillet Americain" is my favorite raw meat. It is very lean beef finely grounded to which you add salt, pepper, mayo, mustard and capers to taste. Mix well and eat on a sandwich or with a side of French fries (my grandma cooked those in pork lard, so wonderful but again taboo here - animal fat).
If you'd like the recipe for perfect French fries, let me know. "French fries" is not the right name for them, everybody knows the best fries are made in Belgium. :-) Sources: My experience .
Beef. Very LEAN beef. The best, to me, is the fillet.
Slice very thin, dip in a favorite marinade (see below), and enjoy. You might also try thin slices from the Round area. You want to stay away from the fat, To me, a nicely marbled steak has to be seared on the outside... very rare is good, but at least some searing.
If you have access to American Bison, it is also very good raw. (mainly the backstrap or fillet) Venison is another good meat, if you steer well clear of the fat. Raw deer fat is really bad!
As in most other meats, the backstrap or fillet is best. There are several marinades... or rather dipping sauces that I like. I think my favorite is Teriyaki sauce... like most all things, homemade is best.
I also like soy sauce with some freshly grated ginger, or maybe some Coleman's mustard. If you're feeling a bit adventurous, try grating some fresh horseradish into some soy sauce. As to your comments in the discussion area, I don't know about the health aspects of eating raw meat, I just like to eat it because it TASTES good!
Also, always be sure of the source of your meat! It needs to be FRESH and well cared for.
With beef tenderloin. Obtain fine, fresh beef and serve with raw egg. It's delicious.

Some suggestions... Typically the prime cuts of meat/beef to eat raw is the same you would eat as a prime steak...sirloins, tenderloin, rib-eye. You want meat that is tender...not very fatty nor too lean. Of course as you know you need to be very careful eating raw meat as you greatly increase chance of getting sick from bacteria.
Personally I like my steaks rare to medium rare (at least warm in the center)...with steak as long as you cook the outside your danger of getting sick is diminished...bacteria does not infect the inside of the mean only the outside. Keeping the above in mind you would probably be better off getting uncut meat/roast so you can cut it yourself and there would be less chance to get dirty meat. Other meats people eat raw...of course fish...sushi...tuna...all very good raw.
Port is not a good idea raw...trichinosis is much rarer these days but still not a good idea to eat raw pork. Definitely do not eat raw poultry. I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
