You'll need jars that are made for canning food. They will be labeled as "canning" jars, or there will be a notation on the container that indicates the jars are suitable for preserving food. I apologize for answering your question so late, but I didn't see your question until a moment ago.

Kilner jars make a much better seal, screw top jars are okay, make sure you fill and store so that liquid in the jar doesn't come in contact with the lid, and remember that they won't store as long, yes, I know manufacturing companies get away with it but they have very expensive, efficient, equipment to make the seal. You're in Yorkshire, you must be within striking distance of a Boots or a Wilkinsons, surely?
I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
