I'm a big fan of both Chipotle and Qdoba on the east side. I know that both are chains, but they both are really good. When it comes to burritos, I think the most important factors are: Rice needs to be really good.

Some places, the rice tastes old and/or is the sticky rice. Mexican rice is critical. Both Chipotle and Qdoba have really good rice.

Guacamole needs to be fresh and really good. Even though guacamole is optional in most burritos, I love having guacamole on my burritos and both of these places have great guac! Tortilla needs to be steamed and fresh.

Other places (Baja Fresh and Acapulco Fresh) do not steam their tortillas and consequently, their burritos are not as good. It also results in sloppy burritos where the juices start to drip because the tortillas are not steamed. Sauces need to be delicious.

Qdoba actually wins on sauces, since Chipotle doesn’t really have any special sauces. I love Qdoba’s pesto sauce and the mole sauce. Ooba's Mexican Grill in Bellevue, Redmond, and Woodinville is by far the best....Acapulco Fresh is good as well Ooba’s skirt steak burrito (with Habanero salsa )is the best burrito I have ever had + the chicken and They have amazing salsas and guacamole as well. Average burrito costs about $7 and come with chips and all the salsa you can eat. The staff is friendly and helpful and they recently were on the Seattle Times "Critics top 10" list.

Bellevue's Best Burrito! - Casa D's Taqueria For at least the past decade or so, Lee and Ross have been serving up Bellevue’s (or perhaps the entire Eastside’s) best burrito’s. No frills just fresh ingredient’s (Roast Pork, Grilled Steak, Shredded Beef, Spicy Pork Sausage {my personal favorite}, Shredded Chicken and more, cooked up daily, these tasty hombre’s are made and served as you stand at the counter.

This place is faaaantastic. For the really hungry, you may think you can handle the ‘Super’. Go ahead add the fresh made guacamole and the sour cream too.

I cant really gove you an answer,but what I can give you is a way to a solution, that is you have to find the anglde that you relate to or peaks your interest.
