A man may choose to study mechanical engineering while a woman chooses elementary education. Various other factors.
I can tell you that at certain mid-level professional or managerial positions in an office, pay can vary a lot by the person, regardless if that person is male or female, for the same jobs. Management and specifically people in charge of hiring often have wide discretion to negotiate salary. From my own observation, I have noticed that women tend to settle on lower salaries whereas men tend to push this process further.
And once you lock your salary in upon being hired, it's extremely difficult to "catch up" to the rest of your peers. There are a few notable exceptions (the expression "On Wheels" comes to mind), but this has been my experience.
